Ingredients:
1/2 cup + 2 tablespoons milk
2/3 cup finely shredded carrot (lightly packed)
1 tablespoon butter or margarine
2 tsp packed brown sugar
1 tsp poppy seeds
3/4 tsp salt
1 1/3 cups whole wheat flour
2/3 cup bread flour
1 ½ tsp bread machine yeast
Directions:

  1. Add ingredients to the bread machine pan making sure to mix the carrots in with milk before incorporating.
  2. Choose the white bread cycle with medium or light crust.
    Note: Check on the ingredients after mixing begins. They should form a smooth ball around the kneading blade. If the dough is too firm or too soft, add more liquid or flour in 1 teaspoon increments. Do not add more than 3 to 4 teaspoons liquid or flour.

3 – Vegetable And Cheese Focaccia

PREP: 20 minutes
BAKE: 3 hours
Ingredients
Dough:
1 cup water at room temperature
4 ½ tsp olive oil
4 1/2tsp sugar
2 tsp dried oregano
1 ¼ tsp salt
3 ¼ cups bread flour
1 ½ tsp active dry yeast
Topping:
1 tablespoon olive oil
1 tablespoon dried basil
2 medium tomatoes thinly sliced
1 medium onion thinly sliced
1 cup thawed frozen broccoli, chopped
1/4 tsp salt
1/4 tsp pepper
3/4 cup grated Parmesan cheese
1 cup shredded part-skim mozzarella cheese
Directions:

  1. Add dough ingredients to bread machine pan.
  2. Choose dough setting; check after 5 minutes. Add 1-2 tablespoons water or flour if the dough is too firm or soft.
  3. After the cycle ends, turn dough onto a floured surface, punch down, and roll into a rectangle measuring 11×19.
  4. Transfer to coated baking pan.

  7. Sprinkle basil on the dough.
  8. Layer tomatoes, onion, and broccoli on top.

1⁄4 cup butter
1 cup onion, minced
3⁄4 cup water + 2 tablespoons water, room temperature
1 egg 3
1⁄4 cups all-purpose flour
1 tsp salt
1 1⁄2 tsp sugar
2 tablespoons nonfat dry milk powder
1⁄2 tsp onion powder
2 tsp yeast
Topping:
1 egg
½ tsp salt
Directions:

  1. To prepare onions, melt butter in a small skillet and Sautee for 10 minutes until tender. Allow the onion to cool.
  2. Set aside the ¼ cup of the sautéed onions, and add remaining onions and dough ingredients to the bread pan.
  3. Choose dough setting.

  4. Preheat oven to 375
  5. After the cycle is done, turn dough onto the floured surface.
    3.  Roll and shape dough into a 12-inch rope, divide into 10 pieces.
  6. Grease a large baking sheet.
  7. Form a ball shape with each piece then flatten slightly.
  8. Place rolls onto the baking sheet.
  9. To make the topping, beat together remaining egg and 1/2 teaspoon salt; brush egg mixture over each roll.
  10. Use the ¼ cup of remaining onions and spread onto each roll.
  11. Cover and let rise in a warm place for 30 to 45 minutes until doubled.
  12. Bake in the oven for 20 minutes or until golden and onion is brown.

9 – Grilled Asparagus Stromboli
Stromboli is pizza dough rolled up with the delicious filling inside.
Makes: 1 stromboli loaf 
Prep: 45- 60 minutes
Bake: 25-30 minutes

Ingredients:
Dough:
2 tsp instant yeast
7/8 to 1 1/8 cups warm water
2 tablespoons garlic or olive oil
3 cups All-Purpose Flour
1 tablespoon pizza dough flavor powder (optional)
1 ¼ tsp salt
Filling:
2 cups fresh asparagus
1 large onion, roughly chopped
1 cup shredded cheese (your choice) Garlic oil or olive oil 
1 small jar drained artichoke hearts (optional)

Directions:

  1. Add all dough ingredients to bread machine pan.
  2. Choose the dough cycle.
  3. Prepare asparagus by washing and trimming.
  4. Add garlic or olive oil to asparagus and onion and toss.
  5. Using a grill or preheated 350-degree oven, grill or roast the vegetables until they are just tender and caramelized.
  6. Add salt and pepper to taste, and set aside to cool.
    Conventional Oven:
  7. Preheat to 400 degrees.
  8. After the dough cycle is complete, roll it out to a 10″ x 15″ rectangle.
  9. Spread the shredded cheese on the dough, leaving a border all around like a pizza.
  10. Add the vegetables in an even layer.
  11. Starting on one of the longer sides, roll the dough up.
  12. Seal the ends and seams well, and place on a parchment-lined sheet pan.
  13. Brush Stromboli with garlic or olive oil, and cover with plastic wrap, and let rise for 30-45 minutes or until doubled in size.
  14. Bake in the oven until deep golden brown.
  15. Cool for 5-10 minutes before slicing and serving.
